A knobbly brown tropical root native to south east Asia, ginger has been used as a spice and medicine in China and India since ancient times. Known to the Greeks and Romans it was available throughout Europe by the tenth century. Early medics used ginger to detoxify other herbs, warm the system and deal with digestive disorders.

Peel then grate or thinly slice fresh ginger. Use in stir-fries, curries, and most Asian dishes. Use fresh with sushi.
